Cranberry Orange Cookies

If you put fruit in cookies it makes them healthy right? These Cranberry Orange Cookies are the perfect treat for any season! Fall is usually when I make these delicious cookies because it’s something different than apple, maple, and pumpkin. I think the flavors fit into the Autumn season perfectly. Although, they have a refreshing flavor that is excellent during Summer. This cookie recipe is easy to make and is sure to get raving reviews at your next get together!

INGREDIENTS

  • 1 cup butter, softened
  • 1/2 cup white sugar
  • 1 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 tablespoon grated orange zest
  • 2 tablespoons orange juice
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1/2 cup chopped pecans (optional)

FOR THE GLAZE:

  1. 1 teaspoon grated orange zest
  2. 3 tablespoons orange juice
  3. 1 1/2 cups confectioners’ sugar

INSTRUCTIONS

  1. Preheat the oven to 350 degrees.
  2. With an electric mixer, cream together the butter and sugars until smooth. Add the egg and vanilla and beat until well blended.
  3. Stir in 1 tablespoon of orange zest and 2 tablespoons orange juice.
  4. In a medium bowl, combine the flour, baking soda, baking powder and salt; add to creamed mixture. Stir in cranberries and pecans, if using.
  5. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  6. Bake for 12-14 minutes, until the edges are just golden. Remove from cookie sheets to cool on wire racks.
  7. In a small bowl, stir together ingredients for glaze until smooth. Drizzle over cooled cookies. Let stand until set.

NOTES:
If you’re storing leftover cookies in a container, place a piece of waxed paper between the layers to keep the glaze a bit more intact.
