If I’m being honest, it was crazy hard trying to pick just one recipe because I have so many favorite Christmas cookies!! If it wasn’t so cold out it might be my favorite time of year solely because there are so many cookies everywhere! The more I thought about it I realized there is one cookie that I really never eat or make other than during Christmas so I have to put it up there as one of my favorites! Drum Roll Please….. Chocolate Covered Cherries! My sister isn’t a big fan of the cherry part so my mom always makes her special cookie with walnuts instead of cherries. Either way, they are so stinking delicious!
So in honor of this holiday season I’m sharing my family’s Chocolate Covered recipe with you!
Chocolate Cover Cherries
Make roughly 2-3 dozen cookies. 350 degrees for 8-10 minutes.
Ingredients:
Cookie:
1/2 cup softened butter
1 cup sugar
1 egg
1 1/2 tsp vanilla
1 1/2 cup flour
1/2 cocoa
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1 (10oz) jar of maraschino cherries
Frosting:
1 cup chocolate chips
1/2 condensed milk
1/4 tsp salt
1 1/2 tsp cherry juice
Directions:
Cookie:
Mix together butter, sugar, egg and vanilla. Once mixed add in flour, cocoa, salt, baking powder, and baking soda and mix well. Dough will be stiff. Shape into 1″ balls and press cherry into each ball.
Frosting:
Melt all ingredients together. Working fast cover cherries on top of each cookie. Bake at 350 degrees for 8-10 minutes.
