The Best Cookies Ever

Over the past 24 hours Winter Storm Stella has poured over 2 feet of snow at my house and I actually think this is exactly what I needed. On Monday I stopped at Michael’s Craft store and purchased my first adult coloring book and a set of 50 colored pencils, yes 50! I also stopped at the beloved Target and bought 3 games to play with my younger brother and grandma (who just had her other knee replaced) while we became more and more snowed in. As my brother, Grandmother and I played Monopoly downstairs my mom was up in the kitchen experimenting making different types of cookies and it got me thinking, what better way to spend a snow day playing board games and baking cookies?! So in honor of this crazy winter storm Stella I decided that it was the perfect day to share one of my most favorite cookies ever!

I can’t tell you how many times I ask someone if they have ever had a Chocolate Crinkle and they say no… (if you just said no you may want to go and preheat your over right now so you can make them!) These cookies are typically made around Thanksgiving and Christmas in my family but we always make extra so we can freeze them and take them out and eat them throughout the year because I’m not going to lie, they are a little messy to make (but that’s half the fun)! These delicious little things are like Heaven in your mouth… I’m not joking! Chocolate Crinkles are soft, chewy, and are almost have a similar texture of a brownie. They taste as amazing coming right out of the oven as they do three days later but let’s be real,  they don’t last more than two days! Okay, okay, I’ll stop blabbing about these yummy cookies and give you the recipe so you can go make them and eat them up!! Enjoy!!

Chocolate Crinkle Cookies

Prep Time: 4 hours
Oven Temp: 350° F
Yields Approx. 40 cookies

Ingredients:
1 cup unsweetened cocoa powder
1 1/2 cups white granulated sugar
1/2 cup vegetable oil
4 eggs
2 tsp vanilla extract
2 cups all-purpose flour
2 tbsp baking powder
1/2 tsp salt
1 cup confectioners sugar

Directions:
1.  Beat together cocoa powder, granulated sugar and vegetable oil. This mixture should look shiny and gritty when mixed well.
2.  Add eggs one at a time mixing throughly after each egg is added, beat on low. Once well mixed well, add vanilla.
3.  In a separate bowl, whisk together flour, baking powder, and salt.
4.  Slowly add dry ingredients into cocoa and oil mixture and beat on low speed until mixed. Be careful not to over beat this mixture!
5.  Cover with plastic wrap and chill for 4 hours or overnight.
6. Put the confectioners sugar in a small bowl. Roll dough into 1″ balls then roll them in powdered su gar until completely covered.
7.  Place on an non-greased cookie sheet about 1″ or more apart and bake at 350° F for 10-12 minutes.
8.  Allow them to cool for a few minutes before transferring to a cooling rack.
